Sauce
3 Tbs dark soy sauce
2 Tbs oyster sauce
1 ½ Tbs brown sugar
1 Tbs rice vinegar
Udon Stir Fry
Neutral oil
2 cups of stir fry veggies, or snow peas etc
Udon noodles for four
Finishing
2 cloves fresh garlic, crushed
Lots of freshly ground black pepper
Mix all sauce ingredients in a bowl or jar.
Heat a nonstick pan over high heat. Add a splash of oil. Add the noodles and enough sauce to coat. Stir-fry until cooked and starting to caramelise.
Add the veggies and pour more sauce over everything. Toss for 2-3 minutes until the veggies are fork-tender and everything is looking browned and sticky.
Remove from heat and stir in some freshly grated garlic and lots of black pepper.
Note: can add protein to bulk out, cook separately before noodles then add back in at the end.
