1 packet dried yeast
1 cup warm water
3½ cups of plain flour
2 tsp salt
3 Tbs brown sugar
2 Tbs bicarbonate of soda
4 cups of water
1 egg whisked with teaspoon of water
Salt flakes
Mix yeast with water and add to flour, salt and sugar. Knead until elastic dough.
Let it rise for an hour before knocking back and dividing into 8 or so equally sized balls. Roll each ball out into a long rope then twist into shape of pretzel then allow to double again in size.
Meanwhile preheat oven to 220°C and then bring remaining water to boil and add bicarb of soda. Place each pretzel in the boiling water for 10 seconds before placing on a lined baking tray.
When finished, brush each pretzel with egg mixture and sprinkle with salt flakes before cooking for 10 minutes or until golden.
