Vietnamese Slaw

Salad

500g red cabbage, cored and finely shredded

1 cup coriander leaves

¼ cup chopped mint leaves

½ cup chopped basil leaves

1 bunch spring onions, sliced

Dressing

4 Tbs fresh lime juice

1 Tbs fish sauce

½ tsp salt

1 tsp sugar

½ cup vegetable oil


Combine cabbage, coriander, mint, basil, and spring onions in a bowl. Whisk together lime juice, fish sauce, salt, sugar, and oil.

Toss cabbage with dressing, then chill, covered, at least 2 hours for slaw to soften.
